Austinchefnut here...Just surfing your blog.  I do salt my ricotta before and after.  In addition, I season with herbs depending on what I plan to do with the cheese as an end result.  Herb de Provence is one of my favorites to sprinkle over the cheese...serves a great many purposes.  Try hanging your cheese in cheese cloth to age it a couple days in your frig (if you can rig it) to see how the flavor and texture changes.  Be sure to have a drip pan under.
