How to Make Balsamic Reduction

How to Make Balsamic Reduction

Step One: Open your windows.  This stuff stinks to high heaven.

Step Two: Combine the following ingredients in a saucepan, over medium-high heat: 1/2 cup balsamic vinegar,  2 tbsp. brown sugar,  2 – 4 tbsp. butter.

Step Three: While holding your breath, whisk, whisk, whisk as the mixture simmers.  When it reduces by about 50%, you can remove it from the heat and breath freely once again.

Step Four: Allow the reduction to cool, then pour it into a squirt bottle for easy access.

I usually make a double batch of this recipe so that I can have it on hand to jazz up any number of dishes.  It makes an excellent addition to roasted or sauteed veggies, especially if you throw a little feta or goat cheese into the mix.  That combo is a sure fire hit over pasta, on a sandwich, or on pizza.  This sauce can also be used for desserts!  Try squirting a little over vanilla ice cream for a kind of weird, but surprisingly yummy treat.
