Vegetarian Sushi shall be yours!!! Actually, I have heard of people putting all kinds of crazy crap in their homemade sushi - Sweet and Sour Chicken, Spicy Pulled Pork, anything goes, really, especially in rice paper. This is awfully inspiring.  I may have to do a post on vegan sushi!

I lunch on avocado hand rolls quite often.  In fact, avocado sushi and japanese pickle sushi are some of my favorites!
