Poor beets. I bought them at the farmer's market when they were fresh and lovely. Now they are a little sad, but probably still tasty. My mission in life (well, one of many) is to use these damned beets this weekend. Lucky for me, my social network streams were flowing beet-heavy this morning, flooding my imagination with a river of beety possibilities.
- Cozy Kitchen posted a recipe for crunchy beet chips. These would probably be awesome with garlic, salt & pepper.
- There was also a lovely recipe for gluten free, beet brownies on Stetted. These would be cheating on our cleanse rules a little bit, but only by a hair. I wonder if they would work with raw sugar instead of white?
- Then, I could always pickle the beets.
- Or perhaps, I should give beet and bean burgers a try. The Kitchn proclaims them to be the best ever. They might also be the only ever, but hey. You never know.
