We also added a chopped shallot and some of the chopped fennel as well. And instead of bacon ends, I bought a few slices of pancetta. I would recommend using a bit of chicken stock to steam the leaves first and then add the browned shallots, fennel and pancetta to your recipe above. I finished the recipe with the zest of 1 lemon and a dash of fresh lemon juice. It was great, thanks for the base of our modified recipe!
