					<description><![CDATA[I would have to agree with you, TomATS.  My philosophy is similar.  Enjoy everything in moderation, and choose your indulgences wisely!  A good compromise for this recipe would be to use half as much butter and flour, giving you a thinner, but still very tasty cheese sauce.  While you could use oil instead of butter to make a roux, you will lose some of the texture and flavor that makes this recipe great.  I also agree with you about the yogurt based butter in cooking.  While I love using it as a spread on muffins, bread, etc., I almost never cook with it.  It just doesn&#039;t behave like butter once it is heated up.

This interesting recipe calls for a &quot;generous&quot; portion of butter. Her answer is to substitute olive oil. What do you think?
Getting back to butter, my view is that, as anything else, it you use it in moderation, it will not kill you.
