I made this for lunch today! It was fabulous! My only question is when are you suppose to add the pineapple. You didn't put that in the instructions so I wasn't sure if it was suppose to be added to the skillet and warmed or tossed in at the end...so I did both.Half went in the skillet and half was tossed in at the end. I cannot say enough about the flavor combination. I didn't enjoy the spaghetti squash in a spaghetti dinner so I was hesitant to try it again. It was perfect in this dish and I do not say that lightly. I felt like I was eating asian take out....thank you so much for adding a much needed veggie dish to my recipe vault.

Thanks, Jill! I'm really glad you are enjoying my blog. I have totally fallen in love with spaghetti squash as well. I think the Thai recipe is my favorite so far. I think I'm going to try making them with a peanut sauce next.
