I am not familiar with the jicama fruit…but will be on the look out for it or, as you suggested, I will substitute with an apple if I’m not able to get the jicama. My mouth is watering for all the flavors you have combined in your corn salsa and avocado salad along with those amazing Black Bean patties served in a tortilla. It sounds YUMMY!
