Smoking chocolate requires pretty low heat, so we borrowed an electric smoker from a friend. It was called The Big Chief, and it was basically a tall rectangular metal box with an electric heating element on the bottom. We have a smoker box attached to our propane grill as well, but I suspect that it would run way too hot to smoke something delicate like chocolate. Another method you could look into is stovetop smoking. I haven't tried it myself yet, but I've heard great things. Here's a tutorial from Saveur: http://www.saveur.com/article/Video/VIDEO-How-to-Make-a-Stovetop-Smoker

It's definitely unique! The smoke flavor is really subtle, giving it almost a hot cocoa kind of taste.

Hi Andrew! I'm so thrilled that you tried this, and yes, you are dead-on about the mess. That sauce is seriously sticky. The smoke flavor is definitely mild, but I think you'll find that it gives the ice cream a much different taste than a classic chocolate. Most people wouldn't guess that the difference is smoke, though they do often detect that something about it is really unique. Good luck with the recipe, and enjoy! I couldn't stop eating this.

Wow. This recipe was just what I needed for my recipe club this month!
Although, I must say that this was the messiest icecream recipe I've ever made. Everything seemed to get coated with the tar-like chocolate sauce. I am now at the stage where the mix is chilling in the fridge, but it seems to taste okay.
The main variation I had to make was that I doubled the liquid smoke because I didn't have smoked chocolate. The smokey taste comes through as a gentle after taste. I don't know if it is meant to be stronger.
