I loved my recipe for Glazed Acorn Squash in the Microwave, so I thought…why not try Spaghetti Squash in the Microwave? I know a lot of people substitute this squash for noodles, but I more so wanted it as a light and healthy lunch option. Yep, I had never had Spaghetti Squash before…so I was pretty much flying by the seat of my pants! LOL However what I created was simply amazing! I LOVED it and know you will too! ENJOY!
Ingredients:
- 1 whole spaghetti squash
- olive oil, use as little as a splash or as much as 1/8 of a cup depending on your taste
- garlic salt, to taste
- black pepper, to taste
Directions:
- With a sharp knife, cut the squash in half and remove the seeds.
- Place one half of the squash on a microwave safe plate and pop in the microwave for 8 minutes.
- Carefully remove squash and add olive oil, garlic salt, and pepper to taste.
- Pop back into the microwave for another 6 minutes.
- Once again, carefully remove the squash and take a fork to scrape the noodle-like sections of squash to remove them away from the peel and to mix up the oil and spices.
- You can eat right out of the squash shell!
