Today’s guest post comes from Elizabeth, of Local Savour. Elizabeth is one of those people with layers. At first glance, you can’t help but notice this striking, confident woman. She’s obviously smart and sassy, and after visiting her blog you’ll discover that she REALLY knows her way around the kitchen. What might not be immediately apparent, is her capacity for good times. Have you ever met a person and the moment you meet them you realize they are the type of person you could really hang out with? You know, become friends and want to actively spend time getting to know more about them. Mary Helen, of Mary Makes Dinner, is that kind of person –– she’s an infectiously creative-type that is fun to be around –– she’s a little rock-n-roll with a smidgen of Patsy Cline, and holds a dash of classic French cooking flare and the ability to share the ways of Japanese and Chinese cuisines with any level of home cook tossed together into a bowl of good ole’ wonderful personality. In short, she’s tops!
Then, you meet her husband, Scott, and realize these two people are p-e-r-f-e-c-t together and can’t imagine them without each other –– they compliment one another so well. I am SO thrilled to hear they are taking the plunge into the wild world of parenthood together, they are going to be some of the coolest parents around and I just know their kid(s) will do big things –– cool mom + cool dad = cool kid, right?!
When Mary Helen asked me to help out with a guest post, as she goes off to have her sweet baby, there was absolutely no hesitation or question, of course I will. Then I thought what ever shall I make for such an occasion? Mary Helen is a queen when it comes to making cold and delicious ice cream treats so I decided to go in that direction and given that we are now celebrating the arrival of her new baby, I thought drinks were in order. Combine the two for these Watermelon Mojito Pops and you’ve got cheers all-around!

Watermelon Mojito Popsicles
Makes 6-8 popsiclesIngredients:
- 5 cups watermelon – rind removed and cubed
- 1 medium lime – zest and juice
- 3/4 cup fresh mint leaves – chopped
- 2 Tablespoons honey
- 1 cup rum
Instructions:
- Place all of the ingredients into a blender or food processor and mix together well for 30-45 seconds.
- Place a large pitcher or bowl with a sieve or cheese cloth over it. Pour the watermelon mixture through to drain off the juice and remove most of the pulp.
- Next, pour the mixture evenly into your popsicle holders leaving about a 1/4” at the top for expansion.
- Place into the freezer for 6 or more hours until completely hardened then serve.
