I have a feeling that dairy would be most people's first choice, especially with all the great resources out there right now for living gluten-free. I often feel like a weird foodie for not getting more excited about cheese. My Dad is a huge cheese lover - the stinkier the better - but I tend to adore the bread more than the butter. But then the two are so symbiotic! What's bread without butter - or pizza without cheese?

Oh, I definitely could NOT give up dairy. I had to give up gluten (Celiac) but I can find suitable gluten-free substitutes. I eat cheese with every meal, however, and I put extra cheese on everything. I love cream top milk from grass-fed cattle . . . . Nothing substitutes for these dairy products.I've always felt that if something in my diet just had to make me sick, I'm glad it's gluten and not dairy. I really wish veggies made me sick, though, so that I could give up those and have my gluten and my diary!I've tasted NadaMoo before, though, and it does substitute well for ice cream.
