This dish is quite easy to make, and puts some of my very favorite flavors together in one dish. A healthy dose of fresh Jalapeno and a dash of Cajun Seasoning gives the dish a spicy kick, mellowed out by the buttery yellow rice and sweet red onions and bell peppers.
Ingredients
Rice
- 1 cup White Rice (well rinsed)
- 1 cup Chicken Broth
- 1 cup Water
- 1 tablespoon Butter
- 1/4 teaspoon Turmeric Powder
- Salt & Pepper to Taste
Stir Fry
- 2 Boneless, Skinless Chicken Breasts
- 1 -2 Jalapenos, seeded, de-veined, minced
- 1 Green Pepper, large dice
- 1 Red Pepper, large dice
- 2 Tomatoes, medium dice
- 1 Red Onion, medium dice
- Cajun Seasoning (to taste)
- Salt & Pepper (to taste)
Start by bringing the rice, butter, broth, and water to a boil. Reduce to a simmer, cover, and cook for about 20 minutes. Meanwhile, prep your stir fry. Season the chicken with a little salt & pepper and cajun seasoning, then saute in a skillet with olive oil and a little butter. Allow the chicken to brown up nicely by cooking over medium to high heat. In another skillet, saute the peppers and onions in olive oil. When the onions begin to clear, add the tomato and jalapeno. Cook for a few minutes, then season to taste with cajun seasoning and salt & pepper. When the chicken has cooked through, slice it into bite sized pieces and add it to the stir fry. Check the seasoning one more time after tossing the ingredients together. If you’d like, add a squirt of lime or lemon juice to kick up the flavor a little. Serve the stir fry over yellow rice and enjoy!
Tips
*You can adjust the heat of this recipe by reducing or increasing the amount of jalapeno.
*You can easily substitute Brown Rice in this recipe. Switch the White Rice for Brown, and add an extra 1/2 cup of water.
*This recipe would work well with almost any other protein. Try switching the chicken for Steak, Shrimp, or Salmon.
