Since our household only consists of two, my hubby and I can get a little overwhelmed when it comes to leftovers. Though I do my best to cook in small batches, there is often at least a portion or two extra. It's easy enough to lunch on a portion or two, but when there is more than that we need to get creative in order to stomach eating the same thing over and over again. Getting creative with leftovers is a skill that every household can get a lot of use from. Less waste means less spending. Besides, my Mom didn't raise me to waste food. Think of all those starving children in… well, err, think of those starving children everywhere.
Reworking leftovers can be very easy, and I think you'll agree, worthwhile. The lovely Cheddar and Chive Fritatta that I showed you guys last week got old after serving 3 or 4, so I used up the rest by tossing it into a fry pan with the leftover home fries and a little oil. Once they were all mixed up and piping hot, I dumped the mixture into a flour tortilla and topped it with a little cheese and some hot salsa. Tada! Breakfast burrito.
