Five quick and easy 5-minute meals starring egg noodles!
I’m a big fan of cooking ingredients ahead of time in order to save time later. I like being able to reach into the fridge for essential ingredients, then throw together a meal in minutes. With a little one on my heels and work deadlines looming over my head, every minute counts. With a little crafty pre-cooking, I can use one package of Egg Noodles for five-minute meals all week long.
Start off by boiling up a great big bag of egg noodles. I used No Yolks Egg Noodles for this week’s meals, and as usual, the brand cooked up smooth, firm, and fluffy. No Yolks Egg Noodles can serve as a healthy base ingredient for any meal. They are made using egg whites, low in sodium, cholesterol free, and low in fat.
Boil your egg noodles ahead of time, then cool them down and store them in the refrigerator for the week. I used No Yolks Broad Noodles for the following recipes, but No Yolks carries a really great variety of noodle shapes including Broad, Extra Broad, Fine, Kluski, Dumplings, and Stir-Fry.
5 Minute Minestrone Soup
Ingredients
- 1/2 cup vegetable broth
- 1/2 cup marinara sauce
- 1/2 cup cooked egg noodles
- 1/4 cup cooked beans
- 1/4 cup mixed veggies, diced
- salt & pepper to taste
Directions
Bring broth and sauce to a simmer in a small saucepan, then add beans, veggies, and noodles. Heat until ingredients are warmed through, then season with salt and pepper, if needed.
5 Minute Cheesy Noodles
Ingredients
- 1 cup cooked egg noodles
- 1 cup whole milk
- 1/4 cup shredded cheddar
- 1 slice American cheese
- 1 tablespoon butter
- 1 tablespoon cream cheese
- salt & pepper to taste
Directions
Heat butter and cream cheese in small saucepan and whisk together as it is melting. Whisk in whole milk and bring to simmer. When simmering, add shredded cheddar and stir until melted. Add American cheese and stir until melted. Add noodles, then season with salt and pepper if needed.
5 Minute Veggie Stir Fry
Ingredients
- 1/2 cup cooked egg noodles
- 1/2 cup sliced veggies
- 2 tablespoons sliced scallion
- 1 tablespoon soy sauce
- 1/2 teaspoon maple syrup
- 1/4 teaspoon garlic powder
- 1/4 teaspoon ginger powder
- 1/4 teaspoon cayenne pepper (optional)
- salt & pepper to taste
Directions
Warm skillet over medium heat then coat with a tiny bit of cooking oil. Sauté veggies until tender. Add egg noodles. Whisk together soy sauce, maple syrup, and spices, then pour into skillet. Toss ingredients together and season with salt and pepper if needed.
5 Minute Coconut Curry Noodles
Ingredients
- 1/2 cup cooked egg noodles
- 1/2 cup diced cooked potato or sweet potato
- 1/2 cup coconut milk
- 1/4 cup diced bell peppers
- 1 – 2 teaspoons red curry paste
- 1 teaspoon coconut oil
- salt & pepper to taste
Directions
Warm skillet over medium heat. Add coconut oil and curry paste, then whisk together. Cook curry paste until sizzling and fragrant (about 1-2 minutes). Add coconut milk and bring to simmer. Add veggies and cook until tender. Toss sauce and veggies with egg noodles. Add salt and pepper if needed.
5 Minute Spinach Scramble
Ingredients
- 1 cup baby spinach
- 1/2 cup cooked egg noodles
- 2 tablespoons shredded cheddar
- 1-2 eggs, beaten
- 1 tablespoon butter
- salt & pepper to taste
Directions
Warm skillet over medium heat. Melt butter in skillet, then add eggs. Stir eggs as they cook, stopping just as they begin to firm up. Add baby spinach and toss ingredients together. Turn off heat, and add shredded cheese, egg noodles, and salt and pepper if needed.
