Green Apple Chive Chicken Salad

This chicken salad recipe definitely falls into the “sometimes healthy” category.  Low in fat, high in protein, and packed with nutritious little crunchy, chewy bits, this chicken salad will rock your world.  Well, as much as a chicken salad can, anyway.  Try it over spinach salad, in a whole wheat wrap, or simply straight up.  And eat all you like.  It’s good for you.

Green Apple & Chive Chicken Salad

Ingredients

  • 2 chicken thighs & drumsticks, poached, deboned, shredded
  • 1/4 cup plain, fat free, greek yogurt
  • 1 bunch chives, finely chopped
  • 1/8 cup dried cranberries
  • 1/8 cup unsalted pumpkin seeds, toasted
  • 1/2 green apple, small dice (soaked in water with lemon and sugar)
  • salt & pepper

Instructions

  1. Prep your chicken ahead of time to make this easy on the assembly.  
  2. Next, prep your apples by soaking them in a mixture of water, lemon juice, and sugar.  This stops them from going brown in your salad.  Let them soak for at least 5 minutes before starting the recipe.
  3. In a small mixing bowl, combine the yogurt and chives, along with salt & pepper to taste.  
  4. Toss in the chicken, cranberries, and pumpkin seeds.  
  5. Drain the apples, then add them to the bowl and mix well.  
  6. Check the seasoning, and adjust if needed.  
  7. This tastes best when made fresh, but will keep well in the fridge for about 4 days.
