Homemade Condiments: Ketchup & Mustard

Like Romeo and Juliet, peanut butter and jelly, or salt and pepper, ketchup and mustard are just two peas in a pod.  One their own, they help enchance sandwiches, dress wraps, or dip finger foods, but they can also be combined with other ingredients to create dressings, sauces, or dips.  Even from-scratch cooks know the value of having these two essential condiments on hand.  Without them, whipping up a quick vinaigrette would be a real pain.  Naturally, making these essential condiments from scratch has crossed my mind.  Not only would it be an interesting experiment in DIY, it could open up these recipes to a million possibilities and variations.  Chipotle ketchup, anyone?  How about a fruit based mustard?  The imagination could run wild.  Anyway, during my research, I came across two helpful videos that address the basics of both recipes.  I'll be giving them a try sometime soon.  In the meantime, have you experimented with homemade ketchup or mustard?  Made any crazy concoctions from the basic recipes?  If so, please tell me all about it in the comments!
